2 c. corn meal
6 c. water
Skinless chicken thighs
Celery
Carrots
Onions
Olive oil
Chicken soup mix (cubes)
Salt
Pepper
Garlic
White cheese (fontina or mozzarella)

Directions:
Directions:
In a large heavy skillet cover the bottom with olive oil. Add chopped onion, celery and carrots. Season with salt, pepper and garlic powder. Sauté on medium low heat. Season chicken pieces with salt, pepper and garlic powder, add to skillet. Add chicken cube, cover and let cook, turning periodically. Add water, wine or chicken stock to keep moist. Chicken is ready when it starts to fall off the bone.
In a large saucepan, bring 6 c. salted water to a boil. Add corn meal in a steady stream while constantly stirring the water in order to avoid clumps. Turn heat to low, continue to stir. Allow the steam to escape by punching with a wooden spoon as it thickens. Turn out on to a serving plate. Serve with stewed chicken and slices of the cheese.
