1 T. flour
1/2 c. sugar
1 egg
2 T. apple cider vinegar
1 8oz can crushed pineapple, drained (reserve juice)
4 c. red delicious apples, unpeeled, and cut into bite size pieces
1 c. salted shelled peanuts
1 8 oz carton nondairy topping
peanuts for garnish

Directions:
Directions:
Combine flour and sugar; mix well. Beat egg; add to flour/sugar. Add vinegar and reserved pineapple juice. Cook in small pan on low heat. Stir and cook until thick. Cool. Pour cooled dressing over pineapples, apples, and peanuts. Mix in nondairy topping. Sprinkle with additional peanuts over top for garnish.
