4 eggs, slightly beaten
1 c. frozen mixed peas and carrots
1 c. chopped cooked, ham, beef or chicken
1 c. shredded cheddar cheese (4 oz.)
1/2 c. milk
1/4 tsp. minced dried onion
2 medium pototoes, peeled and shredded (2 cups)
1/2 c. shredded cheddar cheese

Directions:
Directions:
Combine the eggs, vegetables, meat, 1 c. cheddar cheese, milk and onion. Set aside. Combine the shredded pototoes and the 1/2 c. cheddar cheese. Press onto the bottom and up the sides of a pie plate. Pour filling into potato lined pie plate. Bake at 350 for 45 - 50 minutes.
Let stand 5 -10 minutes before serving.
