1 pound boneless, skinless chicken breast halves or thighs
1/3 cup crunchy peanut butter
1/3 cup boiling water
1 tsp. ground ginger
1 tbsp. lemon juice
1/8 tsp. crushed red pepper

Directions:
Directions:
Cut chicken into 1 1/2 inch pieces. Mix remaining ingredients. Reserve 1/4 cup. Set oven to broil. Thread chicken cubes on 4 - 11 inch metal skewers, leaving space between each. Brush chicken with half of the reserved peanut butter mixture.

Broil chicken with tops about 4 inches from heat about 5 minutes or until brown. Turn and brush with remaining reserved mixture. Broil 5 minutes or until golden brown. Serve with peanut butter mixture and chopped peanuts if desired.

TO GRILL: Cover and grill kabobs 4 to 5 inches from medium coals 15 to 25 minutes; turning and brushing with peanut butter mixture until golden brown.
