Onion, diced

Butter,1 stick
1/2 to 3/4 loaf bread or Unseasoned Croutons
2 Eggs
Salt and Pepper to taste

Directions:
Preheat oven 325
Cook giblets in salt water until tender. About 45 minutes to 1 hour. Chop fine. Save juice it was in. For a 5 lb. bird, dice 1 large onion and 2 celery stalks. Saute in 1/4 c. butter with diced giblets. Cube bread or use Crouton Style Unseasoned Stuffing. Add enough water to make 1 c. for giblet juice. Pour over bread. Add giblet mixture, 1/4 c. melted butter, 2 eggs, salt and pepper to taste. Rub salt inside and out of bird. Put dressing inside of bird and tie shut.
*Prepare stuffing just before you put the bird in the oven. Measure the amount of stuffing that will go into the bird, allowing 1/2 c. per lb. of bird.
I have put my dressing in a lined crockpot and cover. Cook on high 45 minutes or on low for 4 to 8 hours.
