1 1/2 c raisins
1 1/2 c. water
1 c. unsweetened applesauce
3/4 c. Crisco oil
2 eggs
1/2 c. Sugar Twin or 1 c. brown sugar
1 tsp. vanilla
2 c. flour
1 1/2 tsp. cinnamon
1 tsp. soda
1/2 tsp. nutmeg

Directions:
Directions:
Cook raisins in water until water is absorbed. Combine applesauce, oil, eggs, sugar and vanilla; mix well. Combine dry ingredients and add to applesauce mixture; stir well. Add raisins and mix well. Pour into 13" X 9" oblong pan which has been sprayed with Pam or greased. Bake at 350 for 20-25 min. or until done.

Geneva is the wife of Bobby Ray Hollenshead and the daughter-in-law of the late Chester "Jake" and Velma (Beavers) Hollenshead. I have substituted 3 mashed ripe bananas and 1 c. unsweetened pineapple for the raisins. However, you have to cook it a lot longer.
