2 lbs. Elk Steak or Beef Round Steak
1/2 c. flour
4 tbsp. butter
1 can (15 oz.) Tomato Sauce
1/2 c. Red Wine or Beef Broth
2 tbsp. Worcestershire Sauce
1/2 c. diced onion
1/2 c. diced green pepper
1 can (2 1/4 oz.) sliced Black Olives
1 c. sliced fresh Mushrooms or canned
Salt & Pepper to taste
4-6 slices Swiss Cheese
Cooked Egg Noodles

Preheat oven 350
Dredge Elk Steak lightly in flour; shake off excess. Melt butter in a large skillet; browning steaks on both sides. Place in a shallow casserole pan. Combine the next nine ingredients; pour over meat. Cover and bake @ 350 for 1-1/2 hours or until tender. Place cheese over steak before serving.
Serve over noodles.
