6-8 medium red potatoes 1/2 c. sour cream 1/2 c. ranch dressing 1 T. dried parsley 1 c. Shredded cheddar cheese Topping: 1/2 c. shredded cheddar cheese 2 c. slightly crushed corn flakes 1/4 c. melted butter
Cook potatoes until tender, cut into bite size pieces in a large bowl. Combine sour cream, dressing, parsley and 1 c. cheese. Pour over potatoes and toss. Place mixture in a greased 9x13 inch pan. Top with 1/2 c. of cheese. Combine corn flakes and butter; sprinkle over casserole. Bake at 350º for 40-45 minutes.
