1 1/2 c. firmly packed brown sugar
2/3 c. vegetable oil
1 egg
1 c. sour milk or buttermilk
1 t. baking soda
1 t. salt
1 t. vanilla
2 1/2 c. flour
1 1/2 c diced apples (with peelings)

Directions:
Directions:
Combine brown sugar, oil, and eggs; mix thoroughly. In another bowl, mix milk, baking soda, salt and vanilla. Add milk mixture to sugar mixture, alternating with flour. Mix well after each addition. Fold in apples. Pour into muffins pans. Sprinkle with cinnamon sugar. Bake at 325 for 30 minutes or until toothpick comes out clean
