1 c. butter
1 c. chopped onion
2 c. peeled, cored and diced apples
1 c. celery
6 c. diced fresh bread, oven dried
1/4 c. dry Sherry
1 1/2 c. raisins or currants or golden raisins or 1/2 c. each
1/2 tsp. salt
1 tsp. paprika
2 T. fresh lemon juice
1/4 c. chicken broth

Directions:
Directions:
In a large skillet, melt butter; add onion, apples and celery and saute for 7 minutes. Add all remaining ingredients except chicken broth, toss lightly. Remove from heat and stuff Crown Roast. Put remainder of dressing in small greased casserole and add chicken broth; bake covered beside the roast. If baking a rolled loin roast, put all dressing in a greased casserole and increase chicken broth to 1/2 c. Cover and bake for 1 hour at 350.
