1 16-rib Crown Pork Roast (The butcher will prepare this for you.)
Salt and seasoned pepper, to taste
1 tsp. dried rosemary

Directions:
Directions:
Preheat the oven to 450. Rub the roast with seasonings. Wrap foil around the ends of the bones to keep them from burning. Put roast in a roasting pan and put in oven. Reduce heat to 350. Cook 20 - 25 minutes per pound or about 3 hours. A meat thermometer should register 170 F. One hour before roast is done, remove from oven and fill the cavity with Apple Dressing or Dressing of your choice. Return to oven and finish cooking.
Remove meat to serving platter and put paper frills on the bone tips. Serve Cinnamon-Apple Salad around the roast.
