1/2 c. shortening 1 c. sugar 2 eggs, beaten 1 c. mashed bananas 1 tsp lemon juice 2 c. flour (I often use half wheat, half white) 1 Tbsp. baking powder 1/2 tsp. salt
Cream shortening and sugar, then add eggs. Mix bananas well with lemon juice, then add to creamed mixture. Sift together dry ingredients. Bake in greased muffin tin or use paper baking cups for 20-30 minutes at 375º. Makes 12.
