Ingredients:  
4 C boiling water,
1 C bulgur wheat,
3 minced scallions,
C fresh lemon juice,
1 Can chick peas, drained,
1/3 C olive oil,
1 C minced parsley ,
just under 1tsp kosher salt,
C minced mint,
1 pint cherry tomatoes,
1 Can black olives sliced,
zest of 1 lemon.

Directions:
Directions:
Pour boiling water over bulgur, let stand about an hour until bulgur is fluffy.
Drain.
Combine remaining ingredients.
Chill at least an hour.
