4 C boiling water, 1 ¼ C bulgur wheat, 3 minced scallions, ½ C fresh lemon juice, 1 Can chick peas, drained, 1/3 C olive oil, 1 ¼ C minced parsley , just under 1tsp kosher salt, ¾ C minced mint, 1 pint cherry tomatoes, 1 Can black olives sliced, zest of 1 lemon.
Pour boiling water over bulgur, let stand about an hour until bulgur is fluffy. Drain. Combine remaining ingredients. Chill at least an hour.
