1/2 c vermicelli noodles
1 T vegetable oil
1/2 c finely chopped onions
3 T tomatoe puree
2 1/2 15 oz. cans beef broth (5 c)
1/2 c. grated monterey jack (or whatever cheese preferred)

Directions:
Directions:
1.Heat oil in skillet, add noodles and fry until brown, then remove.
2. In same oil saute onions until they are soft. Add tomatoe puree and cook for 2 to 3 min. stirring constantly.
3. Simmer puree, noodles, and broth in a large pan until noodles are tender (6-8min). Add salt and pepper to taste.
4. Add cheese and serve.
