Cheeseburger Soup Recipe

½ lb. beef
¾ c. chopped yellow onion
¾ c. shredded carrots
1 t. parsley
4 T. butter, divided
¼ c. sour cream
3 c. chicken broth
4 c. diced, peeled potatoes
¼ c. flour
8 oz. Velveeta cheese
1½ c. milk
Salt and Hampepper

1. In a 3qt. saucepan brown beef. Drain and set aside. In same pan sauté onions, carrots, and parsley in 1T. butter. Add broth, potatoes and beef. Bring to a boil, reduce heat and cover. Simmer for 12 minutes.
2. Meanwhile in a small skillet melt remaining butter, add flour. Cook and stir for 3 to 5 minutes or until bubbly. Add to soup. Bring to a boil. Cook and stir for 2 minutes.
3. Reduce heat to low. Add cheese, milk, salt and pepper (to taste). Cook and stir until cheese melts. Remove from heat and blend in sour cream.
