Turkey giblets
Onion (chopped)
Celery (chopped)
Butter
Parsley
Garlic
Oregano
Basil
Sage
Celery salt
Salt
Pepper
Chicken stock
Bread for dressing
1 lb sausage meat
2 eggs

Directions:
Directions:
In a large skillet add all ingredients up to and including salt and pepper. SautÚ until giblets are tender. Add chicken stock and continue to simmer. Pour mixture over bread which has been torn in to small pieces and placed in a very large pot or bowl. In another skillet brown the sausage meat well, and then pour over the bread mixture. Add 1 to 2 eggs, depending upon amount of bread used. You may need to add more eggs or stock if the mixture is too dry, and more bread if too wet. Mix together well and form in to large casserole dish. Cook at 350║ for approximately 45 minutes.
