4 c. vinegar
1 c. oil
2 tbsp sugar
4 tbsp pickling salt
Fresh garlic
Fresh oregano
Red peppers (washed, cut in to long strips)

Directions:
Directions:
Add fresh garlic and oregano to sterilized preserving jars. Fill each jar with the red peppers, adding in the occasional onion if so desired.
Bring the vinegar, oil, sugar and pickling salt to a boil. Add to filled jars, seal.
Ready after two weeks.

2/3 bushel red peppers will require approximately 8 batches of brine, and 24 500 ml jars.
