3 c. flour
2 tsp. baking powder
1/2 c. poppy seeds
1 c. peanut oil
1 c. sugar
3 eggs
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350ºF. Line cookie sheet with foil, shiny side up & lightly spray with cooking spray. In large bowl, sift together flour & baking powder. Mix in poppy seeds. In a medium bowl, whisk oil, sugar, eggs & vanilla. Add sifted dry ingredients & mix to combine. Cover & chill dough in the refrigerator for 1 hours. With floured hands, break off teaspoon-size pieces of dough & roll into balls. Arrange on the cookie sheet 2 inches apart & press into circles. Bake for 10-12 minutes then let cool 1 minute on sheet before removing. They get crispier as they cool.
