3 eggs
1 3/4 cups sugar
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
2 cups flour
1 cup oil
5 peeled apples, diced
1/2 cup chopped nuts
powdered sugar, optional

Directions:
Directions:
Mix together eggs, sugar, cinnamon, baking soda, salt, vanilla and flour. Fold oil into dry mixture. Fold in apples and nuts. Bake at 350 for 1 hour in 9X13 pan. After cooling, sprinkle with powdered sugar if desired.
