1 c. sifted enriched flour
1/4 c. sugar
1 tsp. grated lemon peel
1/2 c. butter
1 slightly beaten egg yolk
1/4 tsp. vanilla

2 8 oz. packages cream cheese
1 c. sugar
2 tbsp. lemon juice
1 tsp. vanilla
4 eggs

Crust: Combine flour, sugar, and lemon peel. Cut in butter 'til mixture is crumbly. Add egg yolk, vanilla; blend well. Pat 1/3 of dough on bottom of a 9-inch spring-form pan (sides removed). Bake at 400 for ~6 minutes or until golden; cool. Batter sides of pan; attach to bottom. Put remaining dough evenly on sides to height of 2 inches.

Filling: Beat softened cream cheese 'til fluffy; gradually blend in sugar, lemon juice, and vanilla. Add eggs, one at a time, beating well after each. Pour filling into crust-lined pan. Bake in slow oven (325) 30-45 min. or until set.
