Crust:
8 tbsp (1 stick) butter
1/4 c. powdered sugar
1 tsp. grated lemon zest
pinch of salt

Filling:
2 eggs
1 c. sugar
2 tbsp. flour
3 tbsp. freshly squeezed lemon juice (1 lemon)
1 tsp. grated lemon zest

Directions:
Directions:
Preheat oven to 350 F and get out an 8-inch square pan. For the crust: Beat butter and powdered sugar together until blended then add the lemon zest, flour and salt and mix thoroughly. Press the mixture evenly in the bottom of the baking pan and bake for 20 minutes. Remove from oven and cool on rack. To make filling: Beat together the eggs, flour, lemon juice, and lemon zest until blended. Pour over crust and return to oven to bake for 20-25 minutes until the top is dry and barely browned around the edges - don't overbake; the custard filling should be a bit soft. Remove from oven and cool, then cut into 2-inch squares. Dust with powdered sugar.
