3/4 cup plain flour, 11/2 cups castor sugar, 6 eggs lightly beaten, 185g butter, melted, 11/2 cups desiccated coconut, 3 tsp vanilla essence, 3 cups milk

Directions:
Directions:
Lightly grease a 24cm pie dish. Sift flour into bowl and stir in sugar, coconut, eggs, vanilla, butter & milk. Pour into prepared dish and bake in a moderate oven for about 45 min or until lightly browned. Serve warm or cold with cream, fruit or icecream.

Serves 6-8
