2 whole bulbs garlic
5 pounds redskinned potatoes, scrubbed and quartered
Boiling water
4 tablespoons butter
1 package (8 ounces) cream cheese, softened
1 bunch green onions, chopped
2 cups sour cream
Salt to taste
Fresh ground black pepper, to taste
1/2 cup coarsely chopped fresh parsley
Paprika

Directions:
Directions:
Wrap garlic bulbs in foil. Roast in oven at 350 for about 1 hour or until soft. Meanwhile, in a large pot, cook potatoes in boiling water until tender; drain.
Coarsely smash the potatoes with a potato masher or large fork. Add butter and cream cheese, mixing well. Remove foil from garlic bulbs. With fingers pinch out the roasted garlic, discarding skins. Combine the roasted garlic with the potato mixture. Stir in the green onions, sour cream, salt, black pepper and parsley, mixing well.
Place mixture into a greased 9x13 inch baking dish. Sprinkle top with paprika.
Potato mixture can be made a day ahead and kept covered and chilled in the refrigerator until ready to bake.
Bake covered at 350 for 45 minutes. Uncover and bake an additional 15 to 20 minutes or until heated through and lightly browned.
