1 lb. Polish, Italian or Pork sausage
1 lb. fresh asparagus
4 medium potatoes; peeled and sliced 1/4" thick
1 medium onion;coarsely chopped
1 (16oz) can stewed or diced tomatoes, undrained
1/2c. seasoned croutons (opt)

Directions:
Directions:
Remove casings from sausage; cut into bite size pieces. Pare and slice potatoes 1/4" thick. Clean and cut asparagus into 1" diagonal pieces, reserve tips for longer cuts. Add sausage to pan over medium heat and saute until browned; drain off fat. Add asparagus, potatoes, onions and tomatoes to sausage. Cover and simmer until vegetables are tender; about 20-30 minutes. Do not stir during cooking time. Add salt and pepper to taste. Sprinkle croutons over vegetables; cover and heat 5 min. more.
