8-10 Medium potatoes, peeled and thinly sliced
1 onion, diced
1 package diced ham
1-2 garlic cloves, minced
1/4 cup butter
1/3 cup flour
1 1/2-2 cups milk
Shredded Sharp Cheddar cheese
Bread Crumbs (optional)

Directions:
Preheat over to 375, Grease a large baking dish. Combine potatoes, ham, half the onion and half the garlic in a large bowl. Heat butter in a saucepan over medium heat until melted. Add remaining onion and garlic and saute' 1 minute. Stir in flour and continue cooking, stirring continuously, to make a roux; do not let roux brown. Gradually add milk, stirring continuously, until mixture begins to thicken. Add 1/3 rd of the cheddar cheese and stir until melted. Pour sauce over potatoes. Stir until evenly coated. Layer potatoes in pan with another third of the cheese. Combine remaining cheese with bread crumbs and sprinkle over the top. Add milk to baking dish if potatoes are not well coated. Cover and bake for 1 hour and 15 minutes. Remove cover and continue baking until top is browned and a fork pierces through potatoes with only slight resistance, 5-10 minutes more
