Grammy's Sugar Cookies Recipe

3/4 cup butter
1 cup sugar
1 egg
1 teaspoon of either lemon or orange extract
1 tablespoon of either grated lemon or orange rind
1/2 teaspoon salt
1/2 teaspoon baking powder
2 cups flour

Directions:
Directions:
1. Beat together the butter, sugar, egg, extract, rind, salt, and baking powder.
2. Gradually add in flour and mix well.
3. Refrigerate covered for two hours.
4. When chilled roll out on floured surface and cut with cookie cutters.
5. If using colored sugar to decorate, sprinkle each prior to placing it in the oven. If frosting the cookies, skip this step.
6. Bake at 325 degrees on the center rack for about 8-10 minutes on an ungreased cookie sheet.
7. Remove from cookie sheet to cool.

If frosting the cookies skip # 5 and decorate when cookies are completely cool.

Royal Icing
2 egg whites at room temperature
1 pound confectioners' sugar
food coloring
1 tablespoon lemon juice
1/2 cup water.
Place all ingredients in a bowl and beat at high speed until fluffy, thick and shiny.
