1 1/4 c. brown sugar
1/2 c. mazola oil
2 tsp. vanilla
1 egg
1 c. buttermilk
2 1/2c. flour
1/2 tsp. salt
2 c. rhubarb; diced
1 tsp. baking soda
1 tsp. baking powder
1/2 c. nuts; chopped
Topping:
1 tsp. cinnamon, 1 tbsp. butter, 1/3c sugar

Directions:
Preheat oven 350 Combine first five ingredients. Mix in the rest of ingredients. Spoon batter 2/3 full into greased muffin pans. Mix topping and sprinkle over the batter. Press lightly into batter before baking. Bake for 20 minutes.
