1 c. flour
1 1/4 t. baking powder
1/4 t. salt
1 T. shortening
1/4 c. warm water
oil for frying

Directions:
Directions:
In mixing bowl, stir together dry ingredients. With pastry blender, cut in shortening until mixture resembles fine crumbs. Slowly, stir in warm water. Stirring with a fork until dough clings together. On lightly floured surface, knead until smooth. Roll dough into 10 x12 in. rectangle about 1/8 in thick. Let rest 15 mins. Cut into 2 in. squares or triangles. Heat 2 in oil in electric skillet or deep fat fryer to 375 F. Add sopapillas, a few at a time . Fry for 30 sec turn over with slotted spoon. Fry other side just until light golden brown. Serve warm with powdered sugar or honey.
