1 stalk celery(chopped fine) 1 cup onions(chopped fine) 1/4 lb butter 1/2 cup flour 1 lb crab meat 1/2 lb grated cheddar cheese 1 can evaporated milk (13 oz) 2 egg yolks 1 tsp salt, 1/2 tsp red pepper 1/2 tsp black pepper
Saute onions and celery in butter until onions are wilted-Blend flour in well with this mixture. Pour in milk gradually stirring constantly. Add egg yolks, salt pepper and cook 5 minutes. Pour cooked sauce over crabmeat. Put in lightly buttered casserole. Put in lightly buttered casserole and top with cheese. Bake at 375 for 10-15 minutes
