4 strips of cooked bacon, 2 tbsp bacon drippings, 1 large onion chopped, 1 green pepper chopped, 1 clove of garlic minced, 2 heaping c. chopped or sliced zucchini, 1 qt. tomatoes, 2 tsp sugar, salt

Directions:
Directions:
Crumble bacon and set aside. Saute onion, green pepper, and garlic in bacon drippings. Add zucchini and sprinkle with salt and sugar. Pour tomatoes over all and top with bacon. Simmer until vegetables are tender. Serve over fluffy rice and garnish with a sprinkle of grated Parmesan cheese.
