3 c. zucchini, grated
3 eggs
1 c. vegetable oil
1 1/2 c. sugar
3 1/2 c. flour
2 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. coconut
1 c. chopped nuts (optional)

Directions:
Directions:
Mix zucchini, eggs, oil, sugar and vanilla. Stir in the dry ingredients. Pour into 2 greased and floured loaf pans. Bake at 325 for 1 hour. Cool 10 minutes before removing loaves from pans.
