3 lemons
3 cups sugar
1/2 tsp salt
2 eggs
3 large egg whites
confectioner's sugar for dusting

Directions:
Place oven rack on lowest position. Preheat to 350 degrees. Grate zest from lemons into medium saucepan, set aside. With sharp knife, remove the white pith from lemons and discard. Working over the saucepan to catch juice, cut the lemon segments from surrounding membranes, letting them drop into saucepan. Squeeze any remaining juice from membranes into saucepan. Stir in sugar and salt. Bring to simmer over medium heat, stirring until dissolves. Remove from heat.
In medium bowl, whisk eggs and egg whites together. Slowly whisk the hot lemon mixture into the eggs. Pour into unbaked pie shell and bake for 20 to 25 minutes or until filling is set and golden brown. Let cool on rack. Before serving, dust with confectioners sugar.
