4 baking potatoes
2 eggs
4 T. butter
4 T. whipping cream
dash salt
3/4 c. shredded cheddar or Monterey Jack cheese

Directions:
Directions:
Rinse, scrub, pat dry and prick potatoes with a fork. Bake at 375 for about an hour. Cut a thin slice off the top of each potato. Carefully scoop out pulp and put in a bowl. Separate eggs. Add yolks to potato pulp. Stir and blend until smooth. Add butter and cream. Season to taste. Beat egg whites until stiff peaks form. Fold into potato mixture. Fill shells and sprinkle with cheese. Bake at 375 for about 15 minutes or until heated through.
