1 medium eggplant, peeled and cut in 1/2" slices
1/2 c. mayonnaise
1 c. saltine cracker crumbs
1/2 c. grated parmesan cheese

Directions:
Directions:
Spread mayonnaise on slices and dredge in cheese/crumb mixture. Place in single layer on ungreased cookie sheet. Bake at 425 for 20 - 25 minutes until tender and browned.
