1 1/4 lb. red or all-purpose potatoes 1 c. chicken broth 2 T. butter or olive oil salt & pepper
Cut potatoes into 1" cubes. Combine with broth in a 2 qt. microwave-safe dish. Microwave, covered on HIGH for 10-12 minutes, or until tender. Add butter or olive oil and mash. Season with salt & pepper.
