1 T. butter
1 T. olive oil
2 T. sugar
20 cloves garlic, cut in half
1/2 tsp. thyme
1 1/2 lbs. carrots, cut into 1/4" coins
1/4 c. chicken stock
salt & pepper

Directions:
Directions:
Over HIGH heat cook butter, olive oil sugar, garlic and thyme for 2 minutes. Add carrots. Cook 2 minutes. Add stock, cover and cook 2 minutes longer. Remove lid, cook 2-3 minutes longer (still over HIGH heat), until most of the liquid has evaporated and carrots are covered with shiny glaze.
