1 medium onion
2 T. butter
4 medium carrots, thinly sliced
6 c. cabbage, chopped
1/2 c. chicken broth
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
In large skillet, saute onion in butter until tender. Add carrots; cook and stir for 2-3 minutes. Stir in the remaining ingredients; bring to a boil. Reduce the heat; cover and simmer for 5-7 minutes. Serve with slotted spoon.
