1 pkg. lemon (or orange) flavored cake mix
1 egg
1 (4 oz.) container Cool Whip, thawed
1/2 c. sifted confectioner's sugar

Directions:
Directions:
In a large bowl, combine cake mix, egg, and Cool Whip (batter will be very stiff). Drop by teaspoonfuls into confectioner's sugar. Roll into 1" balls, using sugar to keep dough from sticking to hands.

Place balls of dough 2" apart on a greased baking sheet. Bake 10 - 12 minutes or until light brown on bottoms. Transfer to a wire rack to cool completely. Store in an airtight container. Yield: about 6 dozen cookies.

This recipe can be made with any flavor of cake mix; strawberry, chocolate, or spice also work well.
