3 c. shredded roast 1 can red enchilada sauce 1 can chopped green chilies 1 (16 oz.) pkg. shredded cheese (any kind) 1 pkg. corn tortillas
Mix first 3 ingredients in a bowl and 1/2 package of cheese. Heat tortillas in oil: place about 2 tablespoons of mixture into tortillas and roll up. Place in greased baking dish and top with cheese. Bake at 350º for 20 minutes. Makes 10 to 12 enchiladas.
