1 c. hot mashed sweet potatoes
3 Tbsp butter
2 eggs
1 c. sugar
1/2 c. milk
nutmeg to taste
1 tsp. lemon flavoring
unbaked pie crust

Directions:
Directions:
Add butter to hot mashed potatoes. Beat eggs, add sugar and beat again until light. Combine with potatoes. Add milk, nutmeg, and flavoring. Taste and adjust flavoring. Pour into prepared pastry shell and bake at 350 for about 40 minutes.
