1 cup chopped onion
1 cup diced green pepper
1/4 cup diced pimento
1/4 cup olive oil
2 T flour
2 cups sliced carrots
16 oz can diced tomatoes
1 cup sliced celery
1 lb dry lentils
1 T salt
8 cups water

In large soup pot, simmer onion, green pepper and pimento in olive oil until very soft. Stir in flour. Cook until bubbly. Add remaining ingredients. Cover and simmer for 2 hours. 8 generous servings.
