4 to 6 pork chops, boneless, 3/4" thick
1 T. butter

Topping
1 c. finely chopped mushrooms
1 T. butter
1/2 c. finely chopped parsley
1/3 c. finely chopped red onion
1 egg
1 tsp. salt
Dash of black pepper
1/2 c. grated cheddar cheese

Directions:
Directions:
Heat 1 T. butter in a skillet. Brown pork chops on both sides {you are just browning, be careful not to cook too long or the meat will get tough}. Place in an ovenproof dish. Prepare topping: Saute the mushrooms in 1 T. butter in the skillet until they are no longer moist. Cool. Mix together mushrooms, parsley, red onion, egg, salt and pepper. Place topping on top of pork chops. Bake at 350 degrees for about 40 minutes. Sprinkle with cheese after 30 minutes of cooking time.
