1/4 cup butter/margarine
1/2 cup celery - chopped
1/2 cup carrots - chopped
1/2 cup onions - chopped
1 bunch of broccoli - chopped
2 cups chicken broth (or bouillon cubes and water)
1 can cream of chicken soup
1 cup milk
2 tbsp. flour
2 cups shredded cheddar cheese
1 bottle/can beer

Directions:
Directions:
Saute onions in butter/margarine until soft. Add chicken broth and remaining vegetables and cook until done. Whisk in cream of chicken soup and cheese. Mix milk and flour until smooth and add to soup. Add beer and heat through.

You can add more milk to thin or flour to thicken.

My family likes 1/2 cheddar and 1/2 Velveeta or American cheese - not as sharp. This freezes well so I usually double the batch.
