CUP OF SUGAR

5 TBS OF FLOUR

A DASH OF SALT

2 EGG YOLKS

2 CUPS OF MILK

1 TBP VANILLA

4-5 SEMI-RIPE BANANAS

8 OZ LITE COOL WHIP

9 INCH BAKED PIE SHELL:REFER TO PIE CRUST RECIPE AND DOUBLE THE INGREDIENTS.

PAT DOUGH ALL AROUND THE SIDES AND TOWARDS THE MIDDLE, TAKE THE OVERLAPPING DOUGH ON THE EDGES AND FOLD UNDER AND PINCH TOGETHER. PRICK THE DOUGH WITH A FORK ALL AROUND THE SIDES. BAKE AT 400 DEGREES FOR 10 MINUTES. IF NOT GOLDEN BROWN, BAKE AN EXTRA 5 PLUS MINUTES ON 350 DEGREES.

MIX SUGAR, FLOUR, AND SALT. FLATTEN ALL BUMPS AND ADD EGG YOLKS. MIX MILK GRADUALLY. STIR ON MEDIUM HEAT AND LET IT COME TO A FULL BOIL, SIMMER FOR 2 MINUTES AND THEN ADD VANILLA. REMOVE FROM HEAT AND SET ASIDE TO COOL UNTIL WARM- STIRRING 2-3 TIMES DURING THE COOL DOWN PERIOD. TAKE BANANAS AND MAKE 1/2 INCH SLICES. LINE THE BAKED PIE SHELL WITH SLICES ON BOTH BOTTOM AND SIDES OF DISH. POUR 1/2 OF PUDDING MIXTURE OVER THE SLICED BANANAS AND SMOOTH IT OUT EVENLY. ADD ANOTHER LAYER OF SINGLE SLICES OVER THE MIXTURE AND ADD THE REST OF THE PUDDING MIXTURE, SPREADING EVENLY AGAIN. LET COOL COMPLETELY- YOU CAN EVEN REFRIGERATE IT FOR 30 MINUTES TO HELP IT COOL DOWN. PLACE SARAN WRAP OVER TOP IF YOU REFRIGERATE IT TO AVOID A HARD FILM TO DEVELOP. AFTER IT COOLS, SPREAD THE LITE COOL WHIP OVER TOP. GARNISH WITH EXTRA SLICES OF BANANAS OR DRIZZLED CHOCOLATE AND CHERRIES. TO AVOID THE BANANAS FROM TURNING BROWN ON TOP, SOAK THEM IN PURE LEMON JUICE BEFORE GARNISHING THE PIE. MAKE SURE THEY ARE DRAINED FROM ANY JUICES.
