Boil potatoes with skins on until JUST tender. Cool potatoes, peel if desired (red or new potatoes are good with skins on), then dice into a large bowl. Toss with an oily salad dressing such as Italian, French, Russian, Catalina (not creamy dressings). Chill in Refrigerator. Add sweet pickle relish, mustard, mayonnaise, chopped chives, and diced hard-boiled eggs to taste. Add salt if necessary.
