1 pint pineapple sherbet or pineapple ice cream, softened
2 teaspoons almond extract
1 package white cake mix
6 cups flaked coconut

Directions:
Directions:
Combine first 3 ingredients. Stir in coconut. Drop by tablespoonfuls, 2 inches apart, on greased baking sheets. If desired, sprinkle additional coconut over cookies before baking. Bake at 350 degrees for 12 to 15 minutes. Cool on wire racks.

Yield: 6 dozen
