1 lb. ground beef
1 pkg. 1-1/4 oz. taco seasoning mix
1 can kidney beans rinsed and drained.
1 cup salsa
4 medium green peppers
1 medium tomato, chopped
1/2 c. shredded cheddar cheese
1/2 c. sour cream

Directions:
Directions:
In a large skillet, brown the beef; drain. Stir in taco seasoning, kidney beans and salsa. Bring to a boil; reduce heat and simmer for 5 minutes. Cut peppers in half lengthwise; remove and discard seeds and stems. Immerse peppers in boiling water for 3 minutes; drain. Spoon about 1/2 c. meat mixture into each pepper half. Place in an ungreased 13-in. x 2-in. baking dish. Cover and bake at 350 for 15-20 min. or until the peppers are crisp-tender and filling is heated through. Top each with tomatoes, cheese and a dollop of sour cream.
