1 1/2 cups sugar
3/4 cup shortening
2ggs
1 cup mashed bananas
2 cups cake flour
1 tsp. soda
1/2 tsp. salt
1/2 cup buttermilk
1 cup shredded coconut

Directions:
Directions:
Cream sugar and shortening. Add eggs and mashed bananas. Beat until well mixed. Sift cake flour, soda, and salt and add to creamed mixture with the buttermilk. Fold in the coconut. Chop the coconut finely for a better slicing cake. Bake in an 8 by 8 pan or loaf pan at 350 degrees until a toothpick comes out clean.
