2 cups flour
1/4 cup sugar
1 Tbsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 cup butter or margaine
1/2 cup buttermilk
1 tsp. grated lemon peel
2 eggs (divided use)
2 pts. stemmed and sliced fresh strawberries
1 cup whipping cream, whipped and sweetened

Preheat oven to 450 degrees. Grease a baking sheet. Combine four, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse meal. In small bowl blend the buttermilk, lemon peel, 1 whole egg and 1 egg yolk. Stir in flour mixture to make a soft dough. Divide dough into 6 equal portions. Pat each into a 3-inch circle on a floured board. Place on greased baking sheet. Brush with remaining egg white, beaten. Sprinkle with a sugar and cinnamon mixture. Bake 10 to 12 minutes until golden. Cool on rack. To serve, slice each shortcake in half horizontally. Fill and garnish with strawberries and whipped cream.
