1 T. unflavored gelatin (one packet)
3/4 c. sugar
1/4 tsp. salt
2 egg yolks
1/2 c. cold water
2 egg whites
6 oz. can orange juice, thawed
1 c. heavy cream

Directions:
Directions:
Mix together the gelatin, 1/2 cup of sugar, and salt. Beat egg yolks with water and stir into gelatin mixture. Cook 5 - 15 minutes in top of double boiler over low heat. Stir briskly to dissolve gelatin & sugar (& to make sure no egg yolk or clinging bits of egg white cook). Stir regularly thereafter till the custard thickens up. The mixture should mound slightly when poured from a spoon. Add orange juice and stir some more. Let mixture cool while whipping cream and while beating egg whites to stiffness with the remaining 1/4 cup sugar. Fold egg whites into whipped cream, and then the orange juice mix into that mix. For use not too long after preparation, pour into a bowl that can go into the freezer; otherwise store over a longer period in the refrigerator and check that it's gelling well. Serve with chilled mandarin orange pieces if desired.
